Hello there,
As you probably already know, it’s Pi Day! But since math has never been my strong suit, I prefer to think of it as Pie Day. Much yummier!
To mark the occasion I want to share my favourite pie recipe. It’s the one that gave me this beauty:

The crust comes from Martha Stewart‘s kitchen (naturally). I like it because it’s simple to make, it only takes a couple ingredients and it’s so versatile. It’s her recipe for “Pate Brisee.” I must tell you, it’s delicious. My Grandma’s pie recipe calls for shortening – and I find that it tastes a bit strong. The Pate Brisee is buttery and much less heavy.
Once you’ve made your dough and rolled out your crust, as per Martha’s instructions – the filling is up to you! I made an apple pie with mine, because you can never go wrong with apple pie. For my filling I used:
- 6-7 Honeycrisp apples (or enough to fill your crust), peeled and cut into wedges
- 1/4 cup of brown sugar
- 1 teaspoon of cinnamon
- 2 tablespoons of lemon juice (to keep the apples nice)

To make the pie special, I made the top shell out of hearts. To do that, I used a heart-shaped cookie cutter and cut out the dough. From there, I layered the hearts on top of the pie filling, to make a cover.

After the pie was put together, I brushed it with an egg wash, put it on a cookie sheet and baked it at 425 degrees F for 25 minutes, then reduced the temperature to 375 degrees F and baked it for another hour (until the crust was golden brown and the inside was bubbly). After that – we ate!
I hope you enjoy this recipe. My boyfriend was very happy with it – the way to his heart is definitely through his stomach.
